Storage for your raw vegan cake

  • Raw vegan cake should be served at a semi-frozen consistency (much like a a semi-frozen mousse yet not quite as solid as frozen ice cream). As such it is critical to store raw cakes at the correct temperature and duration, for serving.
  • Raw vegan cakes must be kept in a COLD refrigerator (specifically at 1-2°C which is just above freezing point) - for no more than 8 hours - till serving.
  • ** Note: If temperature is warmer than 2°C, cake will melt.
  • ** Note: If you plan to serve your raw cake more than 8 hours later, store in freezer.  Frozen cake should be thawed gradually and homogenously in fridge (1-2 °C) and held for no more than 8 hours.
  • Please be aware an overstocked fridge or frequent opening/closing of fridge can cause temperature to rise and expedite melting of cake.
  • Serve immediately once out of fridge.

What is raw vegan cake?

  • Raw vegan cake is unbaked and flourless. Its consistency is much like a semifreddo dessert similiar to a semi-frozen mousse, yet not quite as solid as frozen ice cream.
  • As such it is critical to store raw cakes at the correct temperature and duration, for serving.

Why whole foods?

"Whole foods" are unprocessed foods  and can be consumed in their natural state. For vegan cakes, this includes all edible parts of plants such as fruits, seeds, leaves, stems, roots. Whole foods are more beneficial than processed foods as they contain key nutrients in addition to fibre, which are needed by the body for optimal health.

  • This is a key driver behind Cake Botanica's philosophy when making nutritive raw vegan cakes;  I use plant whole foods and in cases where not possible, only very minimally processed alternatives. Read here for the range of plant whole foods i use in creating my delicious vegan cakes.

Minimally processed foods are essentially natural whole foods that have undergone some mechanical processing (such as boiling, drying, grinding, freezing or pasteurization) to extend their life, while retaining most of their original nutritional value. Examples: dried or frozen fruits; dried or dehydrated nuts and seeds; extracted maple syrup and coconut sap.

Processed and ultra processed foods are highly altered foods that have many ingredients added such as salt or sugar, colouring, flavouring additives and preservatives. In the process of extended processing, many of the natural nutrients are removed or destroyed, offering very low nutritional value.  Such ingredients have no place in my raw vegan cake creations.
